Duties and Supporting Responsibilities
Oversee the day to day operations of La Mar including breakfast, brunch, lunch and dinner, with respect to the theme of the restaurant
Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas.
Ensure adherence to all local, state, and federal laws and regulations
Maintain a working knowledge of all recipes, products, and production procedures
Ensure that all menu items are made according to recipe
Confirm that proper hand washing signage is in place
Ensure a safe and secure work and dining environment for colleagues and guests
Take note of and ensure that any potential safety hazards (physical, chemical, biological, etc.) are dealt with immediately
Comply with all health and safety regulations
To have detailed knowledge of all dining standards as outlined by MOHG, La Mar, Forbes, AAA, and MOQA
To have detailed knowledge of food and beverage menu items and sequence of service
Investigate and resolve complaints concerning food quality and service
Work with other management personnel to plan marketing, advertising, and any special restaurant functions
To manage proper staffing levels in accordance to Carpedia guidelines in association with Ascentis and TimeSaver
To manage proper operating equipment par levels.
Oversee scheduling of all La Mar colleagues
Manage recruitment and interviewing of new colleagues for open positions
Oversee training and development of all La Mar colleagues
Chair monthly departmental meeting
Conduct daily communication line-ups with staff prior to shift
Ensure all Restaurant and Bar service procedures are delivered according to MOHG standards
Must visit all guests during or after their meal to ensure satisfaction.
Manage, coach, and counsel colleagues, including disciplinary procedures.
Uphold and enforce all hotel policies and procedures as stated in hotel colleague handbook
Oversee the floor plan according to reservations
Attend all relevant hotel meetings
Communicate all group information/changes of existing information to appropriate hotel colleagues in an accurate and timely manner
Ensure proper phone etiquette.
Coordinate all aspects of service as assigned by self to include but not limited to:
Food and beverage requirements
Timing of events
Special attention guests
Special meal requests
Décor (to include floral) requirements
Develop and update menus, as appropriate
Revise procedures for department based on standard changes and or guest/L&D feedback, as necessary
Organizational Structure The Restaurant General Manager will report directly to the Assistant Director of Food & Beverage. The functional positions of Assistant General Manager, Restaurant Manager, Assistant Restaurant Managers, Servers, Server Assistants, Lead Host, Host/ess Reservationists, Cocktail Server, Runners, Bartenders, Barbacks, Sommelier and MIT will report to the Restaurant General Manager.
