The Mandarin Oriental Savoy, Zurich is located in the heart of the Old Town, in the main business center, close to the city's leisure attractions and just a short walk from the shores of Lake Zurich. The Mandarin Oriental Savoy, Zurich has 80 guest rooms and suites and three dining venues, including an all-day dining restaurant, a specialty restaurant, and a lobby lounge. The hotel is ideal for meetings and events with its newly renovated event facilities, including a grand historic ballroom.

The Head Sommelier will be responsible for driving the development of an innovative and unique wine program. The smooth running and leadership of the service of the designated outlets with service excellence to deliver business objectives and financial success.

As Head Sommelier, you are

responsible for the following duties :

Assist the outlet management to lead and direct the outlet’s service team daily to ensure the operation of the department delivers consistent excellence and guest satisfaction.

To drive kind and generous service in always treating both guests and colleagues in a respectful manner while and treasuring our colleagues as much as our delightful guests.

To ensure active and regular communication with the team through daily line ups and attend meetings as required.

To ensure that the wine list and wines by the glass suggestions are consistently updated.

To display excellent food and wine knowledge, being able to recommend and match appropriate wines with the chosen food to all guests.

Regular wine trainings for FOH and Bar personal.

To ensure that all beverages are correctly charged.

To ensure appropriate processes and systems are in place to deliver both revenue and profit margins as per budget projections.

To handle all duties relating to ordering, requisitions and return of unusable beverages, maintaining sufficient stock levels and MEP, secure storage and completing stock takes.

To be cognizant of quality and cost control through close liaison with the Purchasing and Logistics Director.

Partner with the (A)DoFB and Finance Director to ensure costs are properly managed and departmental margins achieved.

Daily liaison and partnership with the kitchen team to share information, best practice and ensure a harmonious relationship between culinary and service teams, resolving any concerns after and not during service.

To ensure service and Back of House areas are always kept clean and work is conducted according to the MOHG standards of FLHSS.

As Head Sommelier, we

expect from you:

Previous relevant experience.

Minimum WSET Level 3.

Leadership, organizational skills and the ability to lead a team of employees from different cultures

In touch with the latest trends in the bar and restaurant scene

Expressiveness, open-mindedness and team spirit

Excellent communication skills with a natural flair for conversing with guests

Excellent manners and well-groomed appearance, as well as a positive charisma

Resilience and flexibility - your position will include night, weekend and holiday shifts

Very good knowledge of German and English. Additional foreign language skills are an advantage.
