Executive Chef In a young and dynamic team, you are responsible for coordinating the work of the entire brigade of the gourmet restaurant Chez Meyer’s, Jack’s Brasserie, banquets, and breakfast service. As a passionate cook and hotelier, you serve as a role model for the teams and lead their daily routine: you monitor the work pace and quality, bring innovative ideas, and ensure the preparation of dishes in compliance with hygiene standards and according to Relais & Châteaux standards.
• Organize and supervise all culinary preparations of the various restaurants and services.
• Monitor, coordinate, and control procedures in all departments as well as quality maintenance according to Leading Assurance Quality requirements.
• Optimize the department in the best interest of the guests.
• Responsible for compliance with hygiene standards (HACCP) and the quality of ordered products.
• Create menus on request for events.
• Responsible for the maintenance of equipment used in his departments.
• Actively participate in guest care internally and externally.
• Support, advise, and assist team members in performing their tasks.
• Introduce and ensure compliance with procedures within the department according to management objectives.
• Conduct seasonal and annual evaluations of department members, create training plans, and ensure follow-up with management.
• Establish and maintain constant and effective communication between the departments of his area and other hotel departments.
• Ensure staff recruitment in collaboration with the HR department.
• Quality assurance of the staff dining restaurant.
• Participate in weekly management meetings and organize information meetings for his employees.
• Maximize staff deployment according to the salary budget created with management.
• Prepare the gastronomy budget and ensure the sustainability of food costs in collaboration with management.
SPECIAL TASKS AND RESPONSIBILITIES:
• The kitchen chef is responsible for the management, supervision, coordination, and control of the kitchen from an administrative and operational perspective.
• He must maintain high-quality service and impeccable hygiene and ensure guest satisfaction to achieve the qualitative, quantitative, and financial goals set by management.
DESIRED PROFILE:
• You have a degree from a hotel management school / training in the hotel and gastronomy industry / a BTS degree in hotel and gastronomy / a university degree in kitchen / an additional qualification in kitchen.
• You have at least three years of professional experience in a similar position, ideally in a luxury establishment.
• Excellent knowledge of HACCP hygiene standards and safety regulations. • Excellent leadership and communication skills.
• Team spirit, accuracy, and dynamism are essential qualities.
• Independence, organization, flexibility, and creativity are important strengths for this position.
