Head of the Pastry Unit at the Central Food Production
We are looking for a head of the pastry unit at 80% - 100% (permanent contract) for our Central Food Production in Bussigny (CPA), starting March 1, 2026 or to be agreed.
Context
The Lausanne University Hospital (CHUV) is one of the five Swiss university hospitals. It is ranked among the best hospital institutions worldwide according to the 2025 Newsweek magazine ranking. Thanks to its collaboration with the Faculty of Biology and Medicine of the University of Lausanne and EPFL, it plays a leading role in care, research, and education.
The Hospital Logistics Department (LOH) is tasked with ensuring that care, teaching, and research units can fully focus on their core business by providing and developing efficient operational logistics services (disinfection and maintenance, patient transfers, sterilization, catering, goods transport, stock management, etc.).
The hotel service catering includes several major kitchens that produce more than 2.2 million meals annually for patients, staff, and visitors. This work is carried out by more than 300 professionals committed to quality and service.
The central food production (CPA), located on the Bussigny site, groups the cold production activities of the CHUV kitchens (semi-finished bakery, pastry, butchery, and pantry products).
Mission
- You produce and distribute quality pastries according to trade rules and those specific to the hospital sector
- You develop, respect, and enforce the jointly developed recipes
- You develop products integrating the needs expressed by other sectors
- You manage orders and receipt of products (food and non-food)
- You supervise, monitor, and manage your team (interviews, recruitment, schedules)
- You comply with and enforce hygiene and safety directives in force within the institution
- You participate in the training of apprentices in the service.
Profile
- You hold a federal certificate of competence (CFC) as a pastry chef or an equivalent qualification and a federal diploma as a master baker-pastry chef-confectioner
- You have at least five years of experience in the pastry field, as well as experience in a hospital and/or community environment
- You are comfortable with production tasks and raw material management
- You ensure the application of self-control principles (ODAI) and hygiene standards (HACCP)
- You have a good knowledge of common office tools and the French language (minimum B2)
- You are ready to work variable hours (day, evening, weekend, and public holidays) and to provide on-call service.
