Our guests have access to a hotel with 68 rooms, a restaurant and banquet area with around 1,000 seats, and 22 seminar rooms with up to 450 seats. This is the challenge you are looking for:
Production of high-quality meat products for internal sale via the monastery shop and gastronomy
Butchering of slaughter animals, portioning of meat pieces, and preparation of sausages and semi-finished products for the kitchen
Interface between the estate's own farm, slaughterhouse, and kitchen to control the ideal amount of meat for gastronomy and the monastery shop
Independent, cost-conscious purchasing of raw materials and support of the head chef in meat procurement
Suggestions for weekly and à la carte menus
Forward-looking planning to ensure the required product range in the kitchen and monastery shop
Good cooperation with agriculture, gardening, cheese dairy, and monastery shop
