As a Cook, you work in our modern large kitchen and are responsible for preparing meals and dishes for our residents as well as for external guests. You prepare hot and cold dishes and arrange them decoratively. You also ensure a smooth workflow between the kitchen and service staff.
Tasks
In the morning, you first plan the daily routine to ensure all work steps run smoothly. Then you receive the delivered fresh and prepared products, check whether the quality is flawless and whether the delivered quantity matches the information on the delivery note and the order. After that, you prepare dishes and equipment for the preparation of the planned meals and begin processing the food.
Cooks master various cooking methods such as steaming, braising, gratinating, grilling, sautéing, and poaching. You learn to prepare soups, sauces, rice, and flour-based dishes. In the cold kitchen, you arrange meat platters, salads, and pâtés. In the pastry section, you produce sweet or savory baked goods.
You get to know the different stations of a kitchen, such as the entremetier station (preparation of vegetables, soups, flour, egg, and cheese dishes), garde manger (processing of meat, fish, poultry, and game into appetizers like salmon mousse and beef tartare, preparing salads), as well as the saucier station (preparation of hot meat, fish, and poultry dishes).
Cooks also ensure cleanliness and order and always adhere to regulations on hygiene, occupational safety, environmental protection, and fire safety.
Requirements
During meal times, the kitchen is hectic. Especially at noon, guests appreciate quick service. To ensure smooth coordination between kitchen and service staff, cooks must be resilient and plan their work well. Additionally, you bring:
