As a Sous Chef in our restaurant Acht with 160 seats indoors and 40 on the garden terrace, you are responsible together with our kitchen manager for creating a culinary high-quality and varied offer. - Active participation in the development, preparation, and presentation of high-quality dishes made from regional and seasonal ingredients
- Contributing to the creation of new menus, buffet and menu plans as well as purchasing and costing
- Implementing quality control of goods deliveries, storage, and economical processing
- Compliance with all quality and hygiene standards according to HACCP, also regarding the cleaning and care of work equipment, devices, and kitchen inventory
- Application of the latest cooking methods (low-temperature cooking, sous-vide, cook and chill, freeze’n’go, hot fill, shock freezing)
- Assisting in creating staff schedules and co-responsibility for workflow and time planning in the kitchen
- Living an open, comprehensive information and communication policy
- Supporting team spirit through cooperation and helpfulness
- Exemplifying and acting in accordance with the company philosophy
- Compliance with corporate guidelines regarding product mix, cooking philosophy, and purchasing conditions
