About the job
• Report directly to the Executive Chef and work closely with him in all operational decision-making related to the dietary culinary offer.
• Design creative and balanced seasonal menus, adapted to the nutritional needs of patients and current gastronomic trends.
• Supervise and lead all dietary kitchen staff to ensure smooth coordination and flawless execution of preparations.
• Work closely with the clinic's dietitians to ensure the nutritional accuracy and medical compliance of each menu.
• Manage food and beverage costs: rigorous inventory tracking, optimization of raw material use, and waste reduction.
• Ensure sourcing and monitoring of fresh products, prioritizing quality, local ingredients adapted to dietary requirements.
• Train, support, and supervise kitchen staff in strict compliance with hygiene, food safety (HACCP), and quality standards.
• Collaborate closely with other departments, especially the dining service and medical teams, to offer a consistent and high-end patient experience.
• Maintain a positive and stimulating work environment, promoting motivation, team cohesion, and professional development.
• Manage food cost under the supervision of the Executive Chef, ensuring the clinic's budgetary objectives are met.
• Ensure smooth and regular communication with the Executive Chef and relevant teams to optimize organization, planning, and service quality.
• Ensure the presentation, consistency, and taste quality of dietary dishes in accordance with Villars Palace standards.
• Propose innovative initiatives aimed at continuously improving the dietary culinary offer and patient experience.
