The Goldau Nature and Animal Park annually delights around 450,000 guests amidst an impressive rocky landscape and idyllic forests. On 42 hectares, around 100 European wild animal species live. About 200 employees and many volunteers are passionately committed to nature and species conservation, education, and research – driving the sustainable goals of the scientifically managed park forward.
Your tasks
- Overall culinary responsibility at the Goldau Nature and Animal Park with its wide range of offerings; self-service restaurant, à la carte restaurant, three outdoor stations in the park, event catering, animal park manufactory, as well as additional sales stands as needed
- Leading, promoting, and motivating the kitchen and dishwashing teams including apprentices (15 permanent employees, of which 3 are kitchen management)
- Developing the entire offering (economical, seasonal, sustainable)
- Optimal purchasing of all foodstuffs as well as correct inventory management including stocktaking
- Cost control and calculation
- Continuous optimizations in all areas
- Responsible for hygiene and occupational safety in the kitchen and dishwashing area
- Active participation in the kitchen (hands-on mentality)
Your profile
- Completed vocational training as a cook with a federal certificate of competence (EFZ) and corresponding professional further education (e.g., head chef with federal diploma, certified kitchen manager)
- Several years of leadership experience in a similar position
- Experience in organizing kitchen workflows and decentralized leadership
- High quality, cost, and responsibility awareness as well as a pronounced service orientation
- Communicative, team-oriented, and resilient leadership personality
- Flexible, creative, and with a high standard for accuracy and details
- Proficient in MS Office and ideally with industry-specific software
