Context
The Lausanne University Hospital (CHUV) is one of the five Swiss university hospitals and ranks among the best hospital institutions worldwide according to the Newsweek 2025 ranking. Thanks to its collaboration with the Faculty of Biology and Medicine of the University of Lausanne and EPFL, it plays a leading role in care, research, and training.
Within the Hospital Logistics Department (DLOH), the Hospitality Service catering includes several large kitchens producing over 2.2 million meals annually for patients, staff, and visitors. More than 280 professionals work there with high standards and a service spirit. Thanks to our numerous cafeterias and restaurants, you rotate through positions (production, pastry, pantry, service line) and develop sought-after versatility.
Mission
- You develop dishes and menus based on seasons, products, and the needs of our different clients (patients, staff, visitors)
- You prepare food preparation (peeling, washing, cutting, weighing, portioning) then prepare the dishes composing the menus
- You apply the main cooking methods (blanching, sautéing, poaching, stewing, gratinating, roasting, grilling, braising) mastering time and temperatures
- You plate and present appetizing dishes, both visually and taste-wise.
- You participate in preparing menus and snacks for CHUV-related events (aperitifs, events, fairs)
- You contribute to ordering, receiving, and storing foodstuffs while respecting legislation and hygiene rules (HACCP)
- You maintain workstations, assess the hygienic condition of installations, clean and sort waste according to institutional guidelines
- You discover all kitchen positions (including pantry, pastry, and butchery) to develop comprehensive skills.
Profile
- You have completed your compulsory schooling and want to learn a manual, concrete, and useful profession
- You are creative, imaginative, and have a sense of taste and presentation
- You work quickly, rigorously, and organized, even during "rush hours"
- You are flexible and able to adapt to irregular or weekend hours
- You handle stress well, enjoy teamwork and contact.
- You are able to integrate into different teams according to rotations.
