Exclusively for our client in Meilen, we are looking for a talented and committed Sous Chef (m/f/d)
Job Description- Competent representation and support of the head chef in the personnel and operational management of the entire kitchen team.
- Responsible for the professional preparation and presentation of all diet types according to the menu plan and special requests.
- Targeted coordination and motivation of the chefs de partie as well as professional guidance and supervision of apprentices.
- Efficient monitoring of the processes at the pass, ensuring optimal mise en place and compliance with quality and HACCP hygiene standards.
- Active participation in varied menu planning, ordering goods, inventory and efficient duty roster planning.
- Motivated practical involvement in daily operations and active support at the stations during high workload.
- Training as a cook EFZ with several years of professional experience
- Several years of professional experience in a professional kitchen, ideally already in a (deputy) management position
- Long-standing experience in the area of hot and cold kitchen finishing/regeneration and the commissioning of dishes
- Sound knowledge in the area of special diets and the preparation of modified textures
- First experience in personnel management, motivation and development of teams and apprentices.
- Structured, forward-looking working method in duty planning, ordering and pass coordination.
- A good sense for cost calculation processes, food waste avoidance and cost control.
- Absolute routine in dealing with current HACCP guidelines as well as a pronounced quality awareness.
- Confident handling of common PC programmes (e.g. for recipes, orders or duty rosters).
- Professional and independent working attitude
- Flair for plating and decorating dishes
- Willingness to work flexible hours, including shifts with room hour as well as on weekends and public holidays
- A warm and humorous basic attitude and enjoyment of diverse challenges
- Good German language skills, spoken and written
